Easy magical minestrone for a cosy dinner with your loved ones, buon appetito!



  • 2 tsp of minced garlic
  • 7 medium tomatoes
  • 1 bag of chicken broth
  • chilli flakes
  • 2-3 cups of gluten-free pasta (I like mine with fusilli pasta)
  • 2 cups of chopped mixed sweet potato and butternut squash
  • 2 chopped courgettes
  • sea salt & black pepper
  • extravirgin olive oil
  • 2 cans of chopped tomatoes
  • manchego cheese


How to prepare:

  • whizz in your Vitamix/food processor the tomatoes, garlic, chicken broth and chilli flakes
  • when the soup is smooth but firm pour it in a big pot simmering on low heat
  • in the meantime boil water and cook the pasta for 8-10 minutes
  • add to the pot all the other veggies and let it simmer for other 30 minutes, adding sea salt and black pepper to taste
  • pour a good splash of  extravirgin olive oil and the chopped tomatoes to the minestrone
  • add pasta and grated manchego cheese as topping for a pure comforting experience!
