Savoury Beauty Bowl


  • coconut oil
  • 1/2¬†packet of pre-cooked quinoa (or brown rice)
  • 1 small handful of pine nuts
  • 3 medium sized rounded tomatoes
  • 1/2 avocado
  • 1/2 cucumber
  • tofu
  • sea salt and black pepper
  • lemon juice (optional)


How to prepare:

Heat a pan and slightly warm the quinoa, which is a great source of vegan proteins and fibres, with a teaspoon of coconut oil. In another small pan toast the pine nuts to make them crispy until golden-brown, and remember to keep stirring otherwise they can burn quite easily.

When the quinoa is ready place it in a large bowl, add the sliced cucumber, chopped tomatoes, pine nuts, half avocado and the tofu. Season well with salt, black pepper and lemon juice if you want to add extra zesty flavour.
